The Bories Blanques - Carbernet Sauvignon - Pays d'Oc 2016
In the name of a remarkable terroir ... In Languedoc-Roussillon, the "bories" are huts of dry stones, white ("white" in Occitan), very characteristic of the surface of the vineyards of the buttresses. Les Bories Blanques is a reflection of this terroir with remarkable relief and diversity, ranging from the dry hills of the Aude to the foothills of the Causses and the Montagne Noire. They invite you to discover a very qualitative range of wines of varietal combining purity of the fruit and typicity of the soil. A mosaic of soils and climates On the dry hills of the Aude, the soils alternate between eroded sandstones more or less deep and stony terraces of the quaternary more or less filtering. The very high temperatures make it an early zone, ensuring fast and regular grape maturation. With the approach of the buttresses, the limestones are imposed, with places of strong white pierrosities where the sun is reflected and restore heat to the grapes. The contrasting temperature amplitudes between day and night broaden the palette of our assemblages, bringing freshness and balance to the wines. The relief brakes the strength of the winds "Mistral" and "Tramontane" to allow only fresh and dry beneficial air to enter the vineyard. A preserved environment In these large, almost wild spaces, landscapes are shaped by a typically Mediterranean identity. The vineyards not only meet the garrigue, the pine and olive groves, but also small dry-stone huts, the bories (bòria meaning the agricultural estate, the farm in the Occitan language). Formerly sheltered from winemakers to protect themselves from the vagaries of the weather, the bories contribute to the balance of the vine. Blended without binder of white stones extracted from this very rocky soil, the soil thus stones allows the roots to penetrate deeper. The "Blanques" terroir The white color of the limestone cliffs of the foothills of the mountain gives this terroir a very special beauty. A white color that is found on the surface of the vineyards, and which symbolizes the purity of the fruit sought in our wines.
