Grand Vin de Chateau of Ricaud - Cadillac Cotes de Bordeaux - 2011
Without the diversity of terroirs, without the meticulous adaptation of the vineyards to an atypical weather, it would have been impossible to mitigate the effects of an unusual water deficit in Bordeaux until the end of June. The return of precipitation in July reactivates the vegetative cycle and the normal development of maturation. The pressure of the Botrytis before the harvest was contained thanks to a vigilance of all the moments. The sorting before and during harvesting was crucial for the quality of the vintage. It allowed to vinify a Merlot fruity and expressive and Cabernets and Petit-Verdot which benefited largely from conditions of sunshine and temperatures remarkable before the harvest.
