BIN 707, the quintessential expression of Cabernet Sauvignon by Penfolds

BIN 707 is to Cabernet Sauvignon what Grange is to Shiraz: a flawless representation of the grape varity according to Penfolds' distinctive signature. It originates from a meticulous grape selection process, sourced from Coonawara, the Barossa Valley, and Wrattonbully for the 2021 vintage. Named after the iconic Boeing 707 aircraft, it was first produced in 1964 and is crafted only when grape quality reaches its peak (over the past 10 years, two vintages are missing: 2017 and 2020). Consistently ranked among Australia's finest Cabernet Sauvignons, BIN 707 has garnered prestigious acclaim and exhibits aging potential akin to that of Grange.

Tasting notes: 

The Penfolds Bin 707 Cabernet Sauvignon has a deep, dark color. The nose is powerful and complex, showing notes of tapenade, tobacco, chocolate, dried fruits, aged meat, spices, and pastry. On the palate, it is structured and savory, with flavors of blackberry, black olive, dark chocolate, and exotic spices. The tannins are fine and elegant. This wine reflects Penfolds’ signature style — rich, refined, and a noble expression of Cabernet Sauvignon.

The 2023 Cabernet Sauvignon Bin 707 is poised and precise with layers of blackcurrant, mahogany and Chesterfield leather. Its new oak influence is strong yet in tune. This is more refined and approachable at this young age than usual, with bright acidity and sinewy tannins providing a strong base that delivers a long, sustained, fine finish.

(South Australia; 100% Cabernet Sauvignon; the fruit sourced from Coonawarra, Barossa Valley, Padthaway and Wrattonbully; pH 3.66; aged 18 months in new American oak hogsheads; 14.5% alcohol). So gracious and glossy in texture, very lithe and expressive, evolving and flowing as it does so over the palate. Ultra-fine grained tannins trace the shapely exterior. Really plush and elegant in style. Finessed. Better even than the excellent 2022.

Penfolds has enjoyed an incredible history with its starry Cabernet, with the first vintage of Bin 707 dating back to 1964!  Of course, this wine sits in a class of its own, on account of its liberal dunking in spankingly aromatic American oak.  While this recipe sometimes jars, particularly in young wines, it occasionally finds harmony within moments of being bottled. 2023 Bin 707 is simply magical with glorious refinement, not least the finish, which is as distinguished as can be!  I have never felt this way about a two-year-old sample of this commanding Cabernet before.  The balance is head-scratchingly unexpected, yet tremendous.  An entire Turkish bazaar of spices invades the senses, while moments of pristine, herbaceous eucalyptus and mint cut through the exoticism, bringing a genuine sense of McLaren Vale’s ozone-misted flora.  I mention McLaren Vale because this wine is formulated from over two-thirds of fruit from this idyllic region, and perhaps this is another reason why it is an outlier from the monolithic leviathans that populate Bin 707’s back catalogue.  In 2023, this American-oaked wine sits alongside refined Bordeaux and haughty Super-Tuscans, with the fragrant oak adding an intriguing twist. 19+/20

Having had the privilege of tasting many vintages of this wine back to 1964, this is, given time, a superb wine. The inclusion of American oak helps to protect the fruit sweetness over time—I don't know the science of that, however it holds true anecdotally. Here, through the prism of the 2023 vintage, the wine is fresh and yet ripe, and the cool season has taken some of the weight from the bottom register. It was sourced from McLaren Vale, Padthaway and Barossa Valley and matured for 18 months in American oak hogsheads. 14.5% alcohol, sealed under natural cork.

This is such a refined and focused cabernet sauvignon, deeply perfumed and lifted, with aromas of blackcurrants, cedar, grilled meat, bitter chocolate, ink, dried flowers and dried herbs. The palate is full-bodied, silken, textural and tightly wound, with a creamy, chocolaty finish. An Australian classic of the highest order. Excellent. Drink or hold.

Eucalyptus, mint leaf, cocoa bean and cassis straight off the bat, a kick of spice and a ton of personality and swagger. A more charged version of Cabernet than you usually find in Bordeaux, with the precision and purity of cassis fruit, sweet red liquorice and floral aromatics that is entirely singular to this wine. Cabernet lovers should get on board - this is muscular, with walls and floors, all delivered with a lightness of touch. Tom King director, Peter Gago chief winemaker.

‘Coonawarra in 2023 had a bit of a rough patch for Cabernet,’ notes chief winemaker Peter Gago. Consequently none was deemed up to the standard required for Bin 707 (and indeed, no Bin 169 Coonawarra Cabernet was made in 2023 either). So this iteration of Penfolds’ top-tier multi-region Cab is 68% McLaren Vale, 18% Padthaway and 14% Barossa Valley, maturing (like Grange) in 100% new American oak hogsheads for 18 months. The oak is quite prominent at the moment, giving a glossy coconut sheen to this always imposing wine, but this muscular frame, plus firm, chalky, tannins and a vibrant vein of acidity will ensure a long life. Dark chocolate-coated red cherries lead the flavour charge, alongside boysenberries and cassis, along with an exotic savoury twist of tapenade, tarmac, biltong, incense, roasted hazelnuts, eucalypt – endlessly complex and long. Released at £450.
