Penfolds, Bin 707 Cabernet Sauvignon - Australie 2021

Since 1844, Penfolds has been grounded in experimentation, curiosity and uncompromising quality. It is a pioneering spirit which still rings true after nearly two centuries, that has helped Penfolds become one of the most celebrated winemakers in the world today. Over its 180-year history, only four winemakers have helmed Penfolds, each serving as a steward of a distinctive philosophy and style—what we might refer to as the 'House style'.There is a strand of shared DNA throughout Penfolds family of wines, yet each clearly expresses its unique persona.

BIN 707, the quintessential expression of Cabernet Sauvignon by Penfolds.

BIN 707 is to Cabernet Sauvignon what Grange is to Shiraz: a flawless representation of the grape varity according to Penfolds' distinctive signature. It originates from a meticulous grape selection process, sourced from Coonawara, the Barossa Valley, and Wrattonbully for the 2021 vintage. Named after the iconic Boeing 707 aircraft, it was first produced in 1964 and is crafted only when grape quality reaches its peak (over the past 10 years, two vintages are missing: 2017 and 2020). Consistently ranked among Australia's finest Cabernet Sauvignons, BIN 707 has garnered prestigious acclaim and exhibits aging potential akin to that of Grange.

The 2021 vintage, an outstanding vintage for Cabernet Sauvignon

Coonawarra had a dry start to the growing season. Spring was notably warm, with no incidents of frost. Conditions were optimal for flowering. Although there were 14 days >35°C, overall, the summer and autumn conditions were cooler than average, providing ideal ripening conditions. Nearby, Wrattonbully was similarly blessed with optimal conditions. The Barossa Valley growing season was relatively mild with long dry spells. July was unusually dry, resulting in reduced yields, however good rainfall in August provided a solid foundation for the vines to thrive in spring. Vine canopies were healthy, and notably larger than previous years. Spring temperatures were generally warmer than average with favourable climatic conditions for budburst and flowering. Summer temperatures were near long-term average, with 21 days >35°C. Except for a few wet days in February, the predicted La Niña failed to materialise. The generally mild conditions produced cabernet sauvignon grapes of outstanding quality.

(100 % cabernet sauvignon ; provenant de Coonawarra, Barossa Valley et Wrattonbully ; pH 3,65 ; vieilli pendant 16 mois dans de nouvelles cuves de chêne américain ; 14,5 % d'alcool). Un vin incroyablement pur, précis et concentré, chargé de baies fraîches brillantes, croquantes et croustillantes et de cinquante nuances de cabernet cassis. Les tanins sont tendus, avec du grain mais d'une finesse exquise. Ce vin est vif, vibrant, énergique et dynamique dans sa clarté et sa luminosité. Un raz-de-marée de baies fraîches. Le fruit est étroitement enroulé et attaché à la colonne vertébrale bien définie et ciselée. Il glisse sur le palais, scintillant au fur et à mesure et libérant de petits tourbillons et des courants sous-jacents de fruits frais et de sapidité juteuse. Le chêne est presque imperceptible et ce vin est déjà remarquablement accessible. Il est vraiment excellent.

The 2021 Penfolds Bin 707 Cabernet Sauvignon was sourced from Coonawarra (55%), Barossa Valley (32%), and Wrattonbully (13%), and it was aged for 16 months in 100% new American oak hogsheads. It has a deep garnet-purple color and the nose opens with profound scents of crème de cassis, juicy blackberries, and warm, ripe plums, followed by hints of dried mint, dark chocolate, cedar, sassafras, and vanilla pod. Full-bodied, the palate is surprisingly graceful, bright, refreshing, and refined, with bags of energetic fruit and a very long, spicy finish.

The 2021 Cabernet Sauvignon Bin 707 hails from Coonawarra, Barossa Valley and Wrattonbully and is matured for 16 months in American oak hogsheads (100% new). On the nose, the wine is aromatically reticent, but in the mouth, the tannins (then fruit) hit with full force. This is a powerful wine that, to be honest, I find little joy in on release. The firm caveat I would assert at this stage is that old Bin 707—we are talking 20 or 30 years old—is a graceful, powerful, exciting wine. And 2021 was a gorgeous vintage: long, cool and even in the growing season, so the wines produced in this year (from South Australia particularly) are elegant and composed. The fruit here speaks of its vintage origins; however, the oak remains a big part of the story at this early stage. The "plus" part of the score is a very loud indicator of its future potential. 14.5% alcohol, sealed under natural cork.

Just love this wine, so bedded down and young, but clear in its potential. It takes the heart of Cabernet Sauvignon and distils it, intensifies it, wraps up the mint leaf and the liqourice and lifts it on a bed of measured acidity and pure cassis. Fine tannins - there are tons of them but you rarely feel them. Unfined and unfiltered. A vintage with tiny berries and thick skins, so they took cut down on maceration time to keep the emphasis on this purity of expression. There was no Bin 707 or 169 in 2020 because of wildfires, so this is the first in two years. 100% new American oak, barrel fermented. Peter Gago chief winemaker.

This is a very fine 707. Often a bit of a yeoman, this is more sophisticated than I recall. Gun barrel tannins with the glint of steely intent. Like a slick of alloyed ball bearings, rolling across the generously weighted palate while delivering iodine, bouquet garni, a swab of tapenade and cassis in all the right places. Rich and powerful, yet detailed and savory all at once. The juiciness of the fruit effortlessly transcends the slathering of oak, predicting a very bright future. A wonderful wine in the making. Best after 2027.
