The 2007 Cos d'Estournel is blended of 85% Cabernet Sauvignon, 12% Merlot and 3% Cabernet Franc. It has a deep garnet-brick color and the nose reveals quite a lot of evolution—more than the previous six vintages tasted before it in this tasting—with notes of prunes, figs, chargrill and dried herbs plus hints of raisin cake, leather, balsamic and incense. Medium-bodied, refreshing and mature in the mouth, it delivers a good concentration of savory/spicy flavors and an herbal lift on the finish. It should remain at this evolutionary plateau for the next decade, before it begins to decline.

Deep, bright red-ruby color. Aromas of plum, redcurrant and kirsch are complicated by sexy woodsmoke, soy sauce and flowers. Silky and rather lush, with a restrained sweetness and considerable finesse to its moderately ripe, sweet middle palate. Finishes with fine-grained tannins and lingering notes of minerals, herbs, dried flowers and smoke. A lovely 2007.

A beautiful wine with 13.4% natural alcohol, this blend of 85% Cabernet Sauvignon, 12% Merlot, and 3% Cabernet Franc possesses a deep ruby/purple color as well as a sweet perfume of cassis, incense, charcoal, and subtle oak, round, generously endowed flavors, medium to full body, silky tannin, and surprising depth and length. It can be drunk now and over the next 12-15 years.... Drink 2010-2025.

Fresh mushroom on the nose, with dark fruits and berries. Full-bodied, with soft, velvety tannins and a rich, fruity finish. Balanced and pretty, with lovely length. Best after 2012.

Full, rich and ripe, with black fruit and mineral flavors given a firm edge by piquant licorice and herbs. Finishes with good breadth and dusty, fine tannins. (Incidentally, the 2007 Les Pagodes de Cos is unusually sweet and mouthfilling for this second wine, with nicely ripe tannins.)

Am Gaumen sehr präsente Tannine, Bitterschokolade, noch fordernde, dunkle Beerenfrucht mit Wacholder und Schlehen, mineralischer Nachhall, trotz seiner komplexen Form ein recht eleganter Wein mit guter Länge.

Dégusté au château. L’assemblage contient la plus forte proportion de cabernet-sauvignon de l’histoire du château (85 %). Il tranche avec tous les autres médocs du millésime par son extrême puissance et son intensité aromatique, un rien saturante même pour certains dégustateurs. Tout cela s’affinera dans un an et devrait donner une très grande bouteille, massive mais ultra racée.

Coming after the Deuxieme Vin, the nose is far more backward and closed but there is very good fruit intensity here with blackberries, black cherries, violets and again, that tang of orange sorbet that shows the ripeness here. The palate is full-bodied, very good ripeness again with bright black fruits laced with touches of black cherry, orange zest and an engaging citrus freshness towards the finish. This is an unequivocal success for the vintages, certainly one of the best wines. Good grip on the off-dry finish. Superb. Tasted April 2008.

Determinedly, almost exaggeratedly, modern style. Firm, very concentrated nose. Something strange on the nose – very distinctive. Extremely concentrated! And then reasonably supple on the palate – but quite low acid and freshness. A certain rawness but great attack and beef. One of the most distinctive wines of the vintage but a bit forced. All created by the early cutting of the shoots in June – taking a risk that the summer would not be hot. (Otherwise the fruit risked being sunburnt.) Strictly for modernists.
