Château Canon: A Timeless Masterpiece

Château Canon was gradually brought into the 21st century after its acquisition in 1996 by the CHANEL Company. It took twenty years to restructure the vineyards, reinforce the underground galleries and return this 1er Grand Cru Classé to its former glory. Today, the property has reclaimed its original luster.

Château Canon’s remarkable walled vineyard borders the entrance to the Saint-Emilion village. Several million years old, its soil is very homogeneous. The vine grows leisurely and harmoniously on limestone bedrock veined with clay. Then, under Château Canon’s vineyards lies a 30-kilometre labyrinth of underground galleries. These galleries are unique in the world and a well-kept secret.

At Château Canon, we work alongside Nature. It is through the reiteration of Nature’s seasons and colours and the repetition of painstaking work, that our wines are built. Here, it is better to use craft methods, as the teams believe in the value of work carried out by hand. History and tradition are not regarded as a burden, but as a blessing. The wine evokes the history of the property and resists the passage of time. It is both ageless and timeless. Voluptuous, full-bodied and silky, Château Canon defies the years.

It's worth noting that the estate initiated its conversion to Organic Farming in 2021.

The 2005 Canon is all brawn and muscle. Chunky tannins give the 2005 a decidedly virile feel. There is plenty of depth and freshness - this is after all one of the very best sites in all of Bordeaux - so the 2005 will hold for many years to come. Dark fruit, leather, smoke, gravel, crushed rocks and spice linger on the potent finish. Tasting the 2005 today really highlights how far Canon has come in recent years

Nez mentholé, mirabelle, nez expressif un peu sur des notes sucrées de fruits blancs, touche épicée, sous-bois, bouche ronde, épicée, tendue, fraîche droite, beaucoup de classe, relevé en finale. Très persistant. Dernière année dans les anciennes cuves en bois (30 ans). « On a produit 32 hectolitres à l'hectare ; l'assemblage comprend 80 % de merlot et 20% de cabernet franc. La vendange était très saine, magnifique même, il n'y avait pas grand-chose à écarter. Du temps des anciens propriétaires, en 1995 par exemple, ils ont produit 8 000 caisses. Nous, avec ce millésime pourtant exceptionnel, nous ne produirons que 3 400 caisses. »

A strong effort from Château Canon, the 2005 offers a saturated ruby/purple color followed by beautiful floral notes intermixed with black raspberry, black cherry, and some crushed rock. Medium to full-bodied, with extraordinary elegance and precision, this stunner is showing better now than it was early in its life. This wine is set for another three decades of longevity. (93+)

Aromas of fresh cep mushrooms, berries, spices, roses, and sous bois, give way to hints of milk chocolate and vanilla. Full and rich, with beautifully balanced tannins and a long finish. Loads going on in this wine, yet it remains subtle and beautiful. This needs time. Pull the cork after 2015.

Tasted single blind at Southwold. One of the great 2005 Saint Emilion wines. It has a supremely well-defined nose with black cherries, boysenberry and plum on the nose – nicely integrated oak and a touch of cold steel. Ethereal purity. The palate is ripe plumy on the entry, wonderful balance and purity, succulent and showy on the finish but not overbearing with notes of blueberry, violets and plum. Good length and poise. Sensuous and velvety smooth. Diving. Drink 2010-2025+ Tasted January 2009.

Full ruby-red. Sexy, high-toned nose shows a very sweet maraschino cherry quality. Then juicy and energetic, with a vinosity that almost comes as a shock following the nose. The subtle flavors of currant, graphite and minerals linger nicely.

Mid crimson, a bit paler than many. Rich yet savoury on the nose - quit a feat! Very impressive. Succulent yet not at all sweet - expressive of the vintage in traditionnal mode. Dry finish but excellent balance. needs lots of time to unfurl but very appetizing. The first bottle of this was corked but the second bottle was much better than the wine I remember from primeur tastings. Bravo!

This is the finest Canon produced under the Chanel ownership and John Kolasa’s administration. A striking minerality interwoven with black currant and flower aromas jump from the glass of this medium to full-bodied, dense, freakishly elegant effort. Possessing beautiful structure, good acidity, yet remarkable intensity as well as precision, this deep purple-colored 2005 will undoubtedly close down after bottling. Anticipated maturity: 2012-2025.

Un nez de fruits bien mûr indubitable, un corps imposant, une texture veloutée, des arômes intenses, sans lourdeur ni sur-extraction, mais sans non plus l'individualité caractéristique d'autres premiers grands crus classés. Un vin classique, qui ne se révèle pas encore. A boire à partir de 2015.

The nose is quite muted at first. Then with aeration and a wonderful fresh, vigorous nose of brambly black fruits, hawthorn and creme de cassis emerges with superb delineation. The palate has firm tannins balanced with spritely ripe black fruits (blackberry leafà with admirable acidity and crispness on the finish. Very long length. very sophisticated and one of the best Canon's in a long time.

C'est le plus beau Canon que je goûte depuis la reprise de la propriété par le groupe Chanel et l'arrachage des vieilles vignes virosées. Peu à peu ce cru retrouve la trâme et le corps que cet arrachage lui avait enlevé. Très beau nez, fin, mûr et subtil. Bouche très plaisante dès l'entrée, se développant aromatique, grasse et juteuse. Le sens du plaisir est très développé dans ce vin. Finale de bonne longueur, sur des tanins fins. On pourra déjà le boire jeune avec joie.
