Arômes de Pavie - Saint-Emilion Grand Cru 2023

Perse Latitudes

After a first career in the retail industry, Gérard Perse decided in the 1990s to fulfill his passion for vineyards and wine. His future would be written in Saint-Emilion, his land of choice. He acquired, among others, Château Pavie, a premier grand cru classé 'A' of Saint-Emilion, Monbousquet, a classified grand cru of Saint-Emilion, and later Clos Lunelles in Castillon, Côtes de Bordeaux.

Wine is a product that can be enhanced both by its origin and the dishes associated with it. Thus the Perse Family acquired the Hostellerie de Plaisance, a renowned place of gastronomy and lifestyle, which later became Hôtel de Pavie along with its double Michelin-starred restaurant, La Table de Pavie. The collaboration since 2020 with Yannick Alléno, a true icon of French gastronomy, embodies the new dynamics and ambition embraced by the family.

Arômes de Pavie, the expression of a terroir

The second wine of Château Pavie comes from parcels dedicated exclusively to its production. It benefits from the expertise and know-how of the same teams and, as for the first wine, the quest for excellence guides every actions. Following these principles, the vineyard has evolved over the years towards the greatest terroirs and is now located on the limestone plateau of Saint-Emilion, at 85m from the level of the Dordogne. With the same signature as its elder brother, the wine is characterized by its charm and elegance, associated with a beautiful freshness.

The 2023 Arômes de Pavie comes from a single vineyard, vinified in its own separate cellar, and is replete with a redesigned label. It has a slight menthol note on the nose, a trait that I found in other Right Bank wines. Plenty of black plum and boysenberry, just a bit smudged. The palate is medium-bodied with grainy tannins. Mainly black fruit laced with graphite, there is decent weight and freshness on the finish, more than the Clos Lunelles at the moment.

Rich, ripe blackberries, dark cherries, mussel shells, cocoa powder and a chalky edge. Full-bodied and very flavorful, with nicely chewy tannins, lush berry fruit and a dense finish. Big but still fresh and juicy. A blend of 50% merlot and 50% bouchet (cabernet franc). Best after 2028.

The 2023 Aromes De Pavie always comes from the upper plateau and is based on equal parts Merlot and Cabernet Franc. Rocking black raspberries, spicy dark cherries, chocolate, graphite, and hints of spicy oak all define the aromatics, and it's medium to full-bodied, with a deep, layered, elegant, yet concentrated style that shines in the vintage.

Arômes de Pavie (Saint Émilion; 50% Merlot; 50% Cabernet Franc; a final yield of 34 hl/ha; pH 3.65; 14.5% alcohol; tasted at Pavie with Olivier Gailly). Very pretty. The Cabernet Franc is given the space to express itself and it has quite a bit to say for itself! Iris. Struck match. Incense. Black cherry and bramble. Candlewax. An impressively intense mouthful of plump and plush crunchy berry fruits. Well-structured and considerable. Very Côte de Pavie: dark and compact at the core, spherical in the mouth and with lots of energy – more than there used to be. Grainy tannins indicate a long life ahead. A lovely return to the terroir here with quite a lot of old vines making their way into this. Puissant, yes, but sleek and stylish too – and highly expressive of the values of the grand vin.

Blood orange, fennel, salted cracker, ink, love this, a seriously great Aromes de Pavie, with mouthwatering salinity on the finish and a skip in its step. Harvest September 13 to 23. 50% new oak, with the rest in one year old barrels.

The 2023 Arômes de Pavie is a succulent, racy wine that will drink well with minimal cellaring. It offers a beguiling mix of vibrant red/purplish fruit, lavender, spice, mint and blood orange, all lifted by energizing acids.

This is really minerally with salt and dark fruits, such as blackberries and boysenberries. Medium to full body. Layered with fine tannins. Upgrade in quality here. Best ever second wine from Pavie.
