Pavie - Saint-Emilion Grand Cru 2021

Perse Latitudes

After a first life in retail marketing, Gérard Perse decided in the 90's to satisfy his passion for wine. His future will be written in Saint-Emilion, his favorite place. He acquired the châteaux Pavie, 1er grand cru classé "A" of Saint-Emilion, Pavie-Decesse, Monbousquet, grands crus classés of Saint-Emilion and then Bellevue-Mondotte, still in Saint-Emilion, and Clos Lunelles in Castillon, Côtes de Bordeaux.

Because wine is enhanced both by the location and the dishes associated with it, the Perse family bought the Hostellerie de Plaisance, a mecca of gastronomy and lifestyle, which later became the Hotel de Pavie and its double michelin-starred restaurant, the Table de Pavie. Since 2020, the collaboration with Yannick Alleno, a leader of French gastronomy, symbolizes a new dynamic and the great ambition carried by the family. 

The 2021 vintage, a show jumping for experienced rider

Control of pace, lenght of stride and the trajectory necessary to guarantee a clear round.. the 2021 growing season often felt like taking part in a show jumping event. While anticipation and flexibility were essential factors, knowledge and experience in the vineyard were required to get through this vine cycle's tricky climatic episodes of this vintage. Just like the rider who trains and prepares his mount for a jumping event, it is also the result of precise and regular work carried out over time by loyal and passionate teams.

Château Pavie, "Saint-Emilion Premier Grand Cru Classé A"

The wine history of Château Pavie goes back to the 4th century. The estate experienced a renaissance in 1998 when the Perse family acquired it. From then on, Gérard Perse raised the estate to the highest summits of the appellation, symbolized in 2012 by its promotion to Premier Grand Cru Classé A. 

The 37-hectare vineyard is characterized by a great diversity of terroirs between the "limestone plateau" of Saint-Emilion, located at about 85 meters from the level of the Dordogne, and the "middle of the hill" located at about 55 meters from the level of the Dordogne. This exceptional terroir expresses itself wonderfully in the wines, giving them elegance and finesse, freshness and purity. 2021 is a very beautiful example of this.

The 2021 Pavie has a deep garnet-purple color. It is very closed to start, needing a lot of coaxing and swirling to reveal notes of fresh black plums, black raspberries, and wild blueberries, plus underlying hints of lilacs, crushed rocks, forest floor, and jasmine tea. The medium-bodied palate is taut and tense, with latent, energetic notes of red, black, and blue berries intertwined with mineral and floral notes, supported by firm, fine-grained tannins and beautiful freshness, finishing long and perfumed. So, so pretty!

As to the Grand Vin, the saturated ruby/purple-hued 2021 Château Pavie defies the vintage with its ripe, powerful aromatics of cassis, toasted spice, chalky minerality, graphite, and hints of truffly earth. A rich, medium to full-bodied, concentrated, incredibly textured 2021, it has velvety tannins, no hard edges, and a gorgeous finish. It's a testament to the talent and work of this incredible team and is up with the crème de la crème of the vintage. The 2021 is based on 52% Merlot, 30% Cabernet Franc, and 18% Cabernet Sauvignon, brought up in a mix of new and used barrels, hitting 14.14% alcohol and a pH of 3.67. It’s going to age for 20-25 years if well stored.

Very complex with red currants, iodine and iron. Medium-bodied, with a dense yet energetic palate and a long and racy finish showing chalk and gunpowder. Flinty. 52% merlot, 30% cabernet franc and 18% cabernet sauvignon. Tight at the end, suggesting at least four to five years of cellaring. Drink after 2029.

The 2021 Pavie is a potent, brooding wine that is going to need time to be at its best. Floral and spice notes confer freshness on the bouquet. In this tasting, the 2021 feels a bit tight. I doubt that will be an issue in another few years' time. Structurally, the 2021 is a touch lighter than most recent vintages, but the identity is there. The move towards more Cabernet in the blend since 2019 has markedly changed the character of Pavie. The 2021 is on the linear side today. I can't wait to see how it ages.

I find it baffling that the entire portfolio of Perse wines contains lovely fruit and, sadly, dominant and sometimes overpowering levels of oak. But when you climb to the top of the ladder, this wine is more than civilised, with fruit, oak, tannin and acidity all working together. This is a firm wine, of that, there is no doubt, and the greater theme this year is of wines with subtlety and composure, but there are always those extreme wines, and Pavie is usually one of them. But when this wine is truly balanced, and it has been in a rich vein of form recently, I have to commend its quality and potential. Extremely aromatic, focussed and opinionated, this is a structured and concentrated wine, but it retains a degree of class and freshness, too. 18+

Deep black and blue fruit with cocoa and tar character. Compact and full-bodied with firm, ripe tannins that are very textured and interwoven into the wine. This has a lot of structure to go a long way. Yet it remains in balance with finesse. 52% merlot, 30% cabernet franc and 18% cabernet sauvignon.

The 2021 Château Pavie was one of the few wines in the vintage that got a big "wow" in my notes. Based on 52% Merlot, 30% Cabernet Franc, and the rest Cabernet Sauvignon, it's a full-bodied, dense, powerful, beautiful 2021 with classic Pavie darker, richer fruits, notes of spicy oak, chocolate, and violets, ripe velvety tannins, and a great finish. It's not at the 2019 or 2020 level, but don't hold that against it. This is pure brilliance in 2021 and one of the wines of the vintage. 95-97+

Pavie shows the softness I've always been waiting for in the vintage of 2021. For a super masculine wine, it actually showed its tenderness in the cool vintage. I have to say, this might be my most favorite en primeur of Pavie. A layer of mellow, powdery tannins coats the grand body; and rich scents of begonia, hawthorn cake, plum sugar, and a rare delicate violet fragrance flows from inside out. Pavie 2021 possesses the elegance I have not seen in previous vintages. It must be an exclusive "Pavie's memory". One of the darkest colored wines of the vintage, the wine kicks off with black, blue and dark red fruit. Spicy, long, and fresh, with strong oceanic influences, espresso, chocolate, flowers, herbs and salty, wild cherries in the perfume. The wine has equal amounts of richness, freshness, length and energy, with a finish that showcases its deep, limestone soils. There is tension and ample dark, red fruits that carry through to the endnote. The wine blends 52% Merlot, 30% Cabernet Franc and 18% Cabernet Sauvignon, 14.14% ABV pH 3.67. Harvesting took place September 28 - October 12. The lateness of vintage is due to waiting for the Cabernets to ripen, which was a key to wines success. Drink from 2028-2060. 94-96

The 2021 Pavie was picked at 33hL/ha from 28 September until 12 October and matured in 75% new oak, the rest one-year. Team Pavie decided to wait to pick the Cabernet until after the rains just prior to harvest. This is clean and precise on the nose, the Cabernet components (48% of the blend) imparting graphite and light cedar aromas. The palate is medium-bodied with fine grain tannins that frame layered limestone-infused black fruit, quite vibrant and conveying a sense of energy towards the finish. This has the most persistency of Gérard Perse's wines, and whilst I do not hold it up as the greatest Pavie in recent years, it is clearly top of the tree among his portfolio this year. Superb. 14.14% alcohol

The 2021 Pavie is a wine of tremendous potential. Naturally, it shows the more mid-weight style of the year and yet there is plenty of depth as well as energy that starts to emerge with a bit of time in the glass. Bright saline notes shape the wine while extending the finish and adding so much drive. The 2021 is shaping up to be a very special wine. All it needs is time.

75 % de barriques neuves. Boisé grillé imposant, des notes de fusain, d'épices, de fruits noirs très murs. Très dans le style Pavie. Plus droit et moins tannique que d'habitude avec des tanins structurants et bâtisseurs, Pavie 2021 est proche de son terroir et laisse ressortir son côté calcaire. On ressent bien le changement de style de la propriété, notamment en bouche. Les tanins sont très présents et le style s'affine. Reste toutefois très boisé et plutôt massif.
