Pavie Decesse - Saint-Emilion Grand Cru 2021

Perse Latitudes

After a first life in retail marketing, Gérard Perse decided in the 90's to satisfy his passion for wine. His future will be written in Saint-Emilion, his favorite place. He acquired the châteaux Pavie, 1er grand cru classé "A" of Saint-Emilion, Pavie-Decesse, Monbousquet, grands crus classés of Saint-Emilion and then Bellevue-Mondotte, still in Saint-Emilion, and Clos Lunelles in Castillon, Côtes de Bordeaux.

Because wine is enhanced both by the location and the dishes associated with it, the Perse family bought the Hostellerie de Plaisance, a mecca of gastronomy and lifestyle, which later became the Hotel de Pavie and its double michelin-starred restaurant, the Table de Pavie. Since 2020, the collaboration with Yannick Alleno, a leader of French gastronomy, symbolizes a new dynamic and the great ambition carried by the family.

The 2021 vintage, a show jumping for experienced rider

Control of pace, lenght of stride and the trajectory necessary to guarantee a clear round.. the 2021 growing season often felt like taking part in a show jumping event. While anticipation and flexibility were essential factors, knowledge and experience in the vineyard were required to get through this vine cycle's tricky climatic episodes of this vintage. Just like the rider who trains and prepares his mount for a jumping event, it is also the result of precise and regular work carried out over time by loyal and passionate teams.

Pavie Decesse, a history intertwined with Pavie's

The history of Pavie Decesse is closely linked with Château Pavie’s. The vineyard of the former was an integral part of the latter until the end of the 19th century. The estate is one of those "happy few" that belong to the top group of Saint-Emilion Grands Crus Classés. Enjoying the same attention as Château Pavie, whose terroir it essentially shares, Pavie Decesse achieves a consistency of quality which is the definition of a Great Growth.

Its 3.65 hectare vineyard is located on the limestone plateau of Saint-Emilion. Here, Merlots express themselves fully: the limestone brings a lot of freshness and minerality to the wine, while the clays also present in these soils, give it a good structure.

One of the few real "wow" wines in the vintage, the 2021 Château Pavie Decesse reveals a dense purple/ruby hue as well as gorgeous black raspberry and cassis fruit supported by a classic sense of minerality, spicy wood, violets, and truffle. This downright mineral bomb is medium to full-bodied, has a silky, layered mouthfeel, a touch of salinity, and outstanding length. Based on 88% Merlot and 12% Cabernet Franc, aged in 80% new oak, and hitting 14.9% alcohol (pH 3.87), drink this absolutely gorgeous 2021 over the coming 15-20 years.

The 2021 Pavie-Decesse is the final vintage that will be produced, as the two hectares will be blended into Pavie (along with Bellevue-Mondotte). This has fine delineation on the nose with predominantly black fruit, melted tar, dark chocolate and light mo

This is so perfumed and pretty, with red currants, flowers, cassis and hints of sandalwood. Medium-bodied with fine tannins and a lovely finish. Give it a couple of years. This is the last vintage of PD, as it’s now part of Chateau Pavie. Small production. Drink after 2027.

The 2021 Pavie-Decesse is a swan-song, as this small estate was incorporated into Château Pavie beginning with the 2022 vintage. Dark and mysterious, the 2021 offers up an exotic mix of blue/purplish fruit, lavender, menthol, gravel and iron, all wrapped up by firm tannins that convey energy. It's a vivid Pavie-Decesse to drink over the next several decades.

Curling tobacco and saffran spice, edges of bitter chocolate, tannins are already supple, supporting savoury blueberry fruit. Beautiful density and weight, clear grip and lift, subtle complexity, can easily open in three or four years, and expect any remaining bottles to last 15 to 20 years. Thoroughly enjoyable. 33.6hl/h yield. This is the last vintage of Pavie Decesse, so this is the time to buy it if you are a fan.

As always, oak and alcohol fight the fruit, and in this vintage, where the fruit is pure and refined, this difference is even more accentuated than normal. Unfortunately, this is a battle the fruit will never win, and it is a shame because there is some smart Merlot here, and the Franc is also yearning to be set free. 15.5+?

A tight and focused red with blackberry, black-olive and white-pepper character. It’s medium-to full-bodied with a racy structure and fine yet slightly chewy tannins. Energetic.

The 2021 Château Pavie Decesse is another balanced, deep, rich wine in the lineup. Giving up lots of cassis and black raspberry fruits, notes of violets, spring flowers, and chalky minerality, medium to full body, and a great finish, it has good overall freshness, ripe tannins, and a great finish. 94-96+

This is the first time I have found so many violet notes in a Pavie Decesse, lingering around a powerful body that is filled with minerality. All so clean, elegant, and natural. To be honest, I don't see any hints of a cool vintage in Pavie Decesse 2021. Be it the ripe polyphenols, the 14.19% alcohol level, or the solid structure, they all resemble the characteristics of a hot vintage. I’m looking forward to a more splendid performance after bottling. ?????????Pavie Decesse?????????????,???????????????,?????????????,??Pavie Decesse 2021??????????????,???????????14.19%???,????????????????????????????????

Flowers, crushed rocks, flowers, oyster shell, black cherry and a hint of orange flower is discovered in the nose. On the palate, the wine is ripe, round, polished and shows its chocolate-coated orange slices, mint, black plum and chalky character with ease. Give this a year or two in the cellar before pulling a cork. The wine is produced from 88% Merlot and 12% Cabernet Franc, 14.19% ABV. Drink from 2025-2045. 92-94

The 2021 Pavie-Decesse, where 1.5 of the 3.0-hectares was replanted in 2019, was picked on a single day - 4 October at 33.60hL/ha. It has an intense, almost flamboyant bouquet with generous black and blue fruit, hints of strawberry and incense developing in the glass. The palate is medium-bodied and a little oaky on the entry (80% new wood). Firm structure, just a slight edginess on the mid-palate with a grippy, graphite-tinged finish, here, I might have just dialled down the new oak to find more terroir expression on the finish. This will be interesting to revisit once in bottle. 14.19% alcohol

The 2021 Pavie-Decesse is clearly still coming together. Powerful and driving on the palate, Pavie-Decesse shows its trademark energy and virile intensity. Red/purplish fruit, gravel, spice, mocha and iron lend an air of distinction. The malos here are on the later side vis-a-vis the other properties in the range, so the wine comes across as a bit raw in this tasting. Even so, there is good mid-palate density and plenty of character. All the 2021 needs is time to come together.
