Haut Bailly II - Pessac-Léognan 2021

A patchwork of vines spreads across ridges of sandy, gravel-studded soils that sit atop a layer of sandstone. The soils are petrified with the remains of prehistoric fossil shells that descend deep into the earth, offering exceptional drainage and rare minerals. At the heart of it all, a stone’s throw from the chateau building, lies Haut-Bailly’s most precious jewel: an eclectic cohort of ancient vines that each year bestow soulfulness and timeless continuity upon the wine.

Confidence and respect for the quality of Haut-Bailly's fruit demands gentleness and minimal intervention in the winery to nurture wines of purity, charm and precision. Each subplot is harvested ‘à la carte’ to ensure that early-ripening Merlot and late-ripening Cabernet are picked in their most perfect state. Technology is placed at the service of mother nature to add precision and reduce compromise. The estate has now a new facilities at the height of its exceptional terroir. 

A true reflection of the grand vin, Haut-Bailly•II is the result of strict selection. It has the the purity and the precision of its big brother, while offering accessibility in its young age. A model of second wine, it is also the symbol of the second generation of the Wilmers family, who are writing a new chapter for Haut-Bailly.
Its modernized label offers a nod to its past heritage by rediscovering the dot that existed on those of Haut-Bailly until 1985. Red, matching the capsule, it brings energy and discreet elegance. The label also differs from that of the grand vin, by the absence of the mention "Château".
This "N°II" provides immediate pleasure while also offering a strong capacity for ageing. The parcels chosen for its blending give a delicate and suave structure.

Although the II is a Merlot-based wine (while the Grand Vin leans on Cabernet Sauvignon), it very much captures the personality of the estate. I find it exquisite and extremely delicious.

The 2021 Haut-Bailly II reveals aromas of plum, blackberries and vanilla pot, followed by a medium to full-bodied, elegant and balanced palate with powdery tannins and a delicate finish. It is more somber and tense than the 2020 counterpart but remains charming.

This kind of vintage shows off the precise identity of the estate, and while Haut-Bailly has never strayed far from the path into pumped-up or over-oaked wines, the purity in this vintage is like nothing I have seen before. Véronique Sanders is extremely pleased with the results because the new winery has worked sensationally, allowing the team to capture the pure, silky-smooth plum and epice notes that make this wine such a compelling creation.  17.5

The 2021 Haut-Bailly II is solid, if not outstanding. Lots of crunchy red and black fruits, spice, and herbal/tobacco notes define the nose and it's medium-bodied, has ripe tannins, and the vintages pure, fresh, elegant style. It's going to offer pleasure right out of the gate and will be an easy wine to love.

Tobacco leaf, smoke, spice, plums, currants and a touch of coffee bean on the nose. On the palate, the wine is medium-bodied, round, fresh, lifted and focused on its elegant, tobacco-tinted, black currants, plums, spice and cigar wrapper notes. This is perfect to enjoy while waiting for the Grand Vin to develop. The wine blends 70% Merlot, 25% Cabernet Sauvignon, 3% Cabernet Franc and 2% Malbec. Drink from 2023-2033. 90-92

The 2021 Haut-Bailly II was picked from September 27 to October 11, and this year it contains more Merlot, which was deselected from the Grand Vin. It is being matured in 30% new oak. The straightforward bouquet offers blackberry, clove and light tea leaf scents, very Pessac but relatively light compared to recent vintages. The palate is medium-bodied with a slightly tannic entry. Again, like the Le Pape, this is a delicate Pessac-Léognan that does not have high concentration and just tapers a little toward the finish. Drink over the next decade.

The 2021 Haut-Bailly II is soft, silky and super-expressive. Rose petal, spice, mint and red cherry fruit all grace this mid-weight second wine from Haut-Bailly. The aromatics are especially forward. The mid-weight structure of the vintage is very much on display. The 2021 is a real charmer.

Die Nase lässt bereits den Grand Vin vermuten, herrlich duftig, ungemein sauber und klar, dezente Würze, florale Noten, rote Johannisbeeren, Sauerkirschen, Zwetschgen. Im Gaumen rund und weich, delikate Frucht, cremige Textur, die Tannine sind präsent, fein verwoben und von ausgezeichneter Qualität, die Säure trägt zur Struktur bei, hält den Wein frisch. Langer, rotfruchtiger und harmonischer Abgang. Ein top gelungener Zweitwein. 2025-2035 (Verkostet im April 2022. Château Haut-Bailly)

20 % de presse. Bel éclat de fruits noirs, de cassis, de mure, de myrtille pour un bouquet d'une gourmandise subtile avec une pointe d'épices. Juteux, rond et gourmand. De très beaux tanins structurants, veloutés et enrobants. Un Haut-Bailly II très charmeur et diablement à son aise dans ce millésime délicat.

A blend dominated by 68% Merlot, the 2021 Haut-Bailly II exhibits aromas of plums, dark berries and raw cocoa, followed by a medium to full-bodied, lively and seamless palate. Underpinned by powdery tannins, it's an elegant, incipiently complex wine that contains all but one vat of the estate's best Merlot this year.

Rich and seductive, I love the soft red fruit and florality Gently sweet with balanced acidity on the palate giving strawberry and raspberry leaf nuances. This has a succulence and gentle chew - feels refined with mint, slate and stone touches on the finish which gives an overall charm and lift. Well structured, wide and gently expansive with finesse on show. 2% Petit Verdot completes the blend. The first year in the new cellar. A yield of 19hl/ha.
