The best batches of Dourthe N ° 1 Red benefit from 12 months of aging in new French oak barrels, during which the wood tannins blend harmoniously with those of the wine, bringing roundness, harmony and aromatic complexity. For Dourthe N ° 1 Blanc, the desire for a great aromatic wine whose power is based on a good structure, favors the choice of Sauvignon. A rigorous selection of the parcels allows to identify the best qualitative potential of the soil and the grape variety. From vine growing to grape harvesting, winemakers work closely with Dourthe oenologists. For over 20 years, Dourthe N ° 1 Blanc has been benefiting from innovative vinification to enhance the aromatic qualities of Sauvignon. The pellicular maceration and the low temperature fermentation release all the aromatic richness of the healthy and ripe grape and give the wine structure and length. Aging on fine lees with batonnage for 6 months reinforces the balance, finesse and intensity of the aromas obtained.
