The 1999 Pavie, a blend of 65% Merlot, 25% Cabernet Franc, and 10% Cabernet Sauvignon, is a dazzling expression of both terroir and winemaking. The mineral content of the limestone found in the hillside vineyards can be tasted, but there are also mindboggling levels of concentration and extract.
The 1999 is forward and will offer early drinkability. Extraordinarily concentrated, with a thick, unctuously-textured mid-section, and a fabulous 45+ second finish, it offers abundant black fruits, minerals, smoke, dried herbs, and toasty aromas and flavors. A terrific effort, it is unquestionably atypical for the vintage. Anticipated maturity: 2004-2025.
