Robe noire aux reflets framboise, nez puissant, complexe, ultra mûr et épanoui. Bouche particulièrement solide, charpentée, structurée, avec une matirère énomrme, un boisé encore marqué, mais qui ne dissimule pas une très belle expression de fruit. C'est un vin puissant, très réussi, qui demande à se fondre. Un gros potentiel, il faudra l'attendre.

The 1999 Pavie is a candidate for "wine of the vintage". It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners.

Yummy red. Attractive aromas of plums, berries, tobacco and smoke. Full-bodied, with velvety tannins and a long, juicy finish. Best after 2005. 1,665 cases made.

This is a hedonistic, sweet, expansive, and unctuous wine. The acidity is low, and the color a saturated purple/black. The bouquet offers fabulous minerality along with copious quantities of thick, succulent, black raspberry, cassis, and cherry liqueur fruit, all nicely dosed with subtle smoky new oak. It is a wine of immense richness, layers of concentration, and a viscous, long finish that should ensure 30-40 years of drinkability. Anticipated maturity: 2005-2040.

The 1999 Pavie, a blend of 65% Merlot, 25% Cabernet Franc, and 10% Cabernet Sauvignon, is a dazzling expression of both terroir and winemaking. The mineral content of the limestone found in the hillside vineyards can be tasted, but there are also mindboggling levels of concentration and extract. The 1999 is forward and will offer early drinkability. Extraordinarily concentrated, with a thick, unctuously-textured mid-section, and a fabulous 45+ second finish, it offers abundant black fruits, minerals, smoke, dried herbs, and toasty aromas and flavors. A terrific effort, it is unquestionably atypical for the vintage. Anticipated maturity: 2004-2025.
