Joli fruit au nez, jeune, assez éclatant, bouche gourmande, assez épicée, tendue, sèche en finale, prunelle. Donne l'impression d'avoir été vendangé avant la maturité.

Off aromas have not yet begun to appear in the 1995 Canon, but there is no guarantee they won't. For now, it reveals a plum color with a purple center. This medium-bodied wine is tannic, tough-textured, and likely to dry out before the high level of astringent tannin melts away. Last tasted 11/97

A difficult wine to figure out; I have tasted very good bottles and really poor ones. Here's a good one: Slightly coarse, but with good concentration. Very smoky and fruity, with hints of grilled meats and funky earth. Full- to medium-bodied and chunky, with chewy tannins and a long, fruity finish. Best after 2000.

The Fournier family that has run Canon for decades sold the property in 1996 to Chanel, purchasers of the famed Margaux estate, Rauzan-Segla, several years ago. Needless to say, this estate's disappointing efforts over recent years should be reversed. The cellars are being renovated, and with the installation of the capable team of John Kolasa and David Orr, this estate should rebound quickly. Off aromas have not yet begun to appear in the 1995 Canon, but there is no guarantee they won't. For now, it reveals a deep plum color with a purple center. This medium-bodied wine is tannic, tough-textured, and likely to dry out before the high level of tannin melts away.

The moderately saturated, dark plum-colored 1995 is much more interesting than the 1994. Sweet, jammy red and black fruit aromas intermingled with scents of earth, olives, and new saddle leather emerge with coaxing. On the palate, there is a complex, soft, medium-bodied feel to this stylish, subtle wine. It should drink well young and keep for 10-12 years.

I could not find any redeeming qualities in this sinewy, thin, austere, high acid, ferociously tannic wine. As hard as I tried, I could not see any positive side to the manner in which this wine is going to develop. Anticipated maturity: 2000-2008. There is no question that this property will make a strong comeback given the fact that the new owner, the perfume and couture giant, Chanel, is intent on bringing Canon back to its former glory (look at what Chanel has done at Rauzan-Segla in the appellation of Margaux). That being said, this wine was unimpressive.
