Arômes de Pavie - Saint-Emilion Grand Cru 2021

Perse Latitudes

After a first life in retail marketing, Gérard Perse decided in the 90's to satisfy his passion for wine. His future will be written in Saint-Emilion, his favorite place. He acquired the châteaux Pavie, 1er grand cru classé "A" of Saint-Emilion, Pavie-Decesse, Monbousquet, grands crus classés of Saint-Emilion and then Bellevue-Mondotte, still in Saint-Emilion, and Clos Lunelles in Castillon, Côtes de Bordeaux.

Because wine is enhanced both by the location and the dishes associated with it, the Perse family bought the Hostellerie de Plaisance, a mecca of gastronomy and lifestyle, which later became the Hotel de Pavie and its double michelin-starred restaurant, the Table de Pavie. Since 2020, the collaboration with Yannick Alleno, a leader of French gastronomy, symbolizes a new dynamic and the great ambition carried by the family. 

The 2021 vintage, a show jumping for experienced rider

Control of pace, lenght of stride and the trajectory necessary to guarantee a clear round.. the 2021 growing season often felt like taking part in a show jumping event. While anticipation and flexibility were essential factors, knowledge and experience in the vineyard were required to get through this vine cycle's tricky climatic episodes of this vintage. Just like the rider who trains and prepares his mount for a jumping event, it is also the result of precise and regular work carried out over time by loyal and passionate teams.

Arômes de Pavie, the expression of a terroir

The second wine of Château Pavie comes from parcels dedicated exclusively to its production. It benefits from the expertise and know-how of the same teams and, as for the first wine, the quest for excellence guides every actions. Following these principles, the vineyard has evolved over the years towards the greatest terroirs and is now located on the limestone plateau of Saint-Emilion, at 85m from the level of the Dordogne. With the same signature as its elder brother, the wine is characterized by its charm and elegance, associated with a beautiful freshness.

I like 2021 Arômes, not least because fruit leads the way. Of course, the oak comes in too soon and dries out the finish, but there are a couple of seconds when the fruit is King, and it shows just how indulgent and hedonistic this wine can be when it is allowed to express itself. This is a jolly nice wine with exotic touches and depth of black and red berries, but you have to be wearing your oak boots to take it on. 17

Firm, broad tannins here, with a plush and creamy texture. Full body. Ripe and deep core of dark-blue and black fruit with oyster-shell and iodine character, too. Attractive fruit. 50% merlot and 50% cabernet franc.

Coming from the same parcels every year since 2018 (it's not a true second wine) and a blend of equal parts Merlot and Cabernet Franc, the 2021 Arômes De Pavie is terrific and has more than a touch of Pavie character in its spicy oak, darker, chocolaty fruits, and spicy aromas and flavors. Medium to full-bodied on the palate, I love its texture, it has ripe, chalky tannins, good mid-palate depth, and a great finish. It's unquestionably an outstanding wine.

Flowers, spice, espresso and dark cherries permeate the nose. On the palate, the wine is soft, fresh, round, fresh and fruity with a wealth of red plums, crushed stone, spearmint and espresso on the back end. Aromes de Pavie is no longer the second wine of Pavie. All of the fruit come from a specific 11 hectare parcel, so it should be looked at as its own brand. The wine blends 50% Merlot and 50% Cabernet Franc. Drink from 2023-2037. 89-91

The 2021 Arômes de Pavie has contained new blocks since 2017 that are exclusive for this cuvée. A blend of 50% Merlot and 50% Cabernet Franc, it is matured in 50% new oak. It has a clean and delineated bouquet with black cherries and blueberry fruit, not quite as ostentatious as I have found previous vintages. The palate is medium-bodied with a pleasant edginess on the entry, a more mineral/limestone-driven Les Arômes with a pleasant piquancy on the finish, if not quite the persistence of the appellation's top wines. 14.44% alcohol

The 2021 Arômes de Pavie is gorgeous, and also quite harmonious for a young barrel sample. A burst of floral aromatics makes a strong opening impression. Crushed rose petal, red berry fruit, mint, blood orange and spice all race across the palate. The Arômes is everything a second wine should be. It's such a classy wine.

Kräftiges Rubinrot. Expressive Nase, dunkle Frucht, merklich Holz, süsse Gewürze. Im Gaumen weich und cremig im Auftakt, knackige Frucht, feine Säure, die Tannine sind gut dosiert, da ist genügend Fruchtdruck mit im Spiel, um die Struktur zu kontern. Angenehm lang und mit einem Mix aus dunklen und roten Beeren im Rückaroma. Hohe Qualität. 2026-2040 (Verkostet im April 2022. Dourthe)

Uniquement le second vin avec un parcellaire identifié. Boisé grillé, épices blondes, un peu tabac avec des notes de fruits noirs intenses. De la tension, du volume, très structurant pour une belle entrée en matière dans l'univers de Ch. Pavie.
