The 2018 Arômes de Pavie is made up of 65% Merlot, 18% Cabernet Franc and 17% Cabernet Sauvignon, harvested September 27 to October 8 with yields of 42 hectoliters per hectare. The wine has a 3.56 pH and 14.42% alcohol. Very deep purple-black in color, it is a little shy to begin, opening out to give scents of baked black and red cherries, mulberries and blackberry tart with suggestions of licorice, mocha, tilled soil, smoked meats and lilacs with a touch of oolong tea. Full-bodied, the palate is jam-packed with ripe, rich black fruit, framed by firm, rounded tannins and seamless freshness, finishing long and savory. This is a very serious second wine that bears more than a passing resemblance to Château Pavie.
