Canon - Saint-Emilion Grand Cru 2021

Château Canon, un Premier Grand Cru Classé intemporel

Château Canon est entré de plein pied dans le XXIè siècle lorsqu’il a été racheté en 1996 par la maison CHANEL. Vingt ans ont été nécessaires pour restructurer le vignoble, consolider les galeries souterraines et redonner au 1er Grand Cru Classé ses lettres de noblesse. Aujourd’hui, la propriété a retrouvé son lustre d’origine.

L’exceptionnel vignoble clos de murs de Château Canon borde l’entrée du village de Saint-Emilion. Figé il y a plusieurs millions d’années, le sol sur lequel il repose présente une grande homogénéité. La vigne s’épanouit lentement et harmonieusement sur un socle calcaire veiné d’argile. Ses racines plongent dans les sédiments venus du fond des âges et s’épanouissent particulièrement dans la texture argileuse du sol, possédant une forte capacité de rétention. Et puis, sous le vignoble de Château Canon, se cache un dédale de plus de 30 kilomètres de galeries souterraines. Une configuration unique au monde et un secret bien gardé.

A Château Canon, on fait allégeance à la nature. Jour après jour, c’est la seule répétition des saisons, des couleurs, des gestes, qui permet la construction des vins. Ici, on fait la part belle au travail manuel, artisanal, à l’éloge du geste. L’histoire, les traditions n’y sont pas vécues comme un poids, mais comme une chance. Geste après geste, le vin renaît chaque année à la vigne.
Château Canon est un vin qui parle de longévité. Il évoque l’histoire de la propriété, traverse les temps, il est à la fois indémodable et intemporel. Voluptueux, généreux et soyeux, Château Canon défie les années.

A noter que le domaine a officiellement lancé sa conversion en Agriculture Biologique en 2021.

Notes de dégustation - Millésime 2021

Touches rouges et fusantes, impression sanguine, Château Canon 2021 nous entraîne dans un corps-à-corps électrisant. En tête, framboises et fraises sémillantes se lovent dans un fond tourbé. Puis la couleur se densifie jusqu’au rouge profond de la cerise, au noir amer d’un bâton de réglisse. La chair est ferme et musclée, dense et sans excès. Une bouche droite et tendue concourt à la justesse de ces formes. La fleur d’oranger enrobe cette composition d’une note rayonnante, épaulée par la fraîcheur d’une pointe d’orgeat plutôt que de miel. La multiplicité des registres étonne, à rendre ce millésime provocant à qui sait le sonder. Fruité, floral, végétal, fumé ; l’équilibre a pris corps.

The 2021 Canon has a clean and precise bouquet. Redcurrant, cranberry and wild strawberry scents gradually emerge, perhaps a little more tertiary than previous vintages. The palate is medium-bodied with fine tannins—a strict Canon, quite saline with just a hint of licorice coming through toward the finish. Although it does not reach the imperial heights of other vintages in recent years, the 2021 is still a fine effort considering the challenging growing season.

Today, Canon routinely turns out some of the most compelling wines in Bordeaux. The 2021 is a superb example of the new Canon in a challenging year.”

The 2021 Canon shows just how magical this site is. Vertical and explosive in feel, with tons of pure power, it impresses with its intensity, drive and super-classic profile. Bright saline notes and vibrant tannins give the 2021 a feeling of energy that only gains momentum with time in the glass. It's not an easy Canon, like the 2015 or 2018, but it is incredibly expressive. It is the sort of wine that only truly emerges with time in bottle. I would be thrilled to own it. Canon must surely be one of the great relative values in first-class wine. Wow. Tasted two times.

The 2021 Canon opens in the glass with a pure bouquet of raspberries, cherries and plums mingled with pretty top notes of iris, licorice, mint and sweet spices. Medium to full-bodied, deep and layered, it's fleshy and sensual, with a deep and seamless core of fruit framed by ultra-refined tannins, a bright spine of acidity and a long, mineral finish. With an impressively low finished pH of 3.37, it was taken out of barrel a month earlier than usual and saw no fining—as has been the case since 2010.

N°54 TOP 100 JS FRANCE 
Lots of crunchy red cherries and blue plums followed by violets, fresh sage and Christmas spices with baking spice and coconuts. Medium- to full-bodied with superb fine-grained racy tannins and beautifully refreshing acidity that gives an edge to it. Gorgeous finesse and elegance with harmony and precision. Delightful, too. Already drinkable but give this a few more years to come around. Try after 2026 and it should be beautiful for a long time.

Maintains estate signature, with raspberry, red cherry, charred sandalwood and clove, with saffran, sage and white pepper adding extra layers and nuance. Successful in the vintage, one to look out for. Don't expect it to have entirely escaped the fingerprint of 2021 though, this is delicate and finessed but austere, and will need a good four or five years in bottle to soften further. 50% new oak, 40hl/h yield, harvest September 16 to October 8. Gorgeous fragrance, pretty and pure. Juicy and clean, this has such a lovely energy and focus to it – lifted, bright but not searing, juicy but not too acidic, weighty but still streamlined and direct. I love the fine tannins, still with some tension, and a soft, sality liquorice outline. Feels elegant and finessed, polished and stylish with lift and movement.

This is a gentle, layered, silky and near-flamboyant Canon, and nothing is forced nor too urgent, and the result is a wine that is serenely fruited and beautifully balanced on the nose and palate. While this is firmly a medium-weight wine, there is a density of perfume and succulence on the palate, and it will enchant all-comers. The freshness and elegance here are tremendous, and the flavours are kaleidoscopic. With an impressive length and thought-provoking complexity, this is a multifaceted wine with great accuracy, refinement, and drive. 18.5

From a château you can't go wrong with, the 2021 Château Canon is another head-turning, elegant, seamless wine that comes from unquestionably one of the greatest terroirs on the upper plateau of Saint-Emilion. Based on 71% Merlot and 29% Cabernet Franc that hit 13.55% alcohol, it will spend 18 months in 50% new barrels. It shows the vintage's fresher, elegant style beautifully, with lots of perfumed red fruits, spice, flowers, and chalky notes. These carry to a medium-bodied, seamless, elegant Saint-Emilion that has supple tannins, a notable sense of freshness (although I suspect the pH is solid), and a great finish.

Although Canon 2021 has a softer and more delicate floral and fruity aromas, its essential elegance still remains. I love its milk-liked palate and silky tannins. The classic chalky texture brought by limestone plateau skillfully compensates for the lack of concentration in this vintage. The mild sense of saltiness on the finish warms up the whole body. To me, Canon 2021 is like an old black-and-white photo that only takes two simple colors to interpret “reservedness and luxury”. ??Canon 2021???????????,?Canon?????????????????????????????????????????????????????????????????;?????????????????????????,2021???Canon????????????,???????????“?????”?

The nose stands out with its nuances of flowers, crushed stones, spearmint, cigar wrapper, red plums, fresh cherries, herbs, and a touch of fennel. The wine is all about its freshness, purity, energy and elegant nature, finishing with silky tannins with their trademark touch of salt, mint leaf, and sweet, vibrant red berries. The wine blends 71% Merlot with 29% Cabernet Franc, 13.5% ABV. The harvest took place September 16 - October 6. Drink from 2026-2055. 94-96

Gorgeous bright plum colour with violet reflections. The epitome of careful, precise, well-spliced winemaking. Sibling estate Berliquet has perhaps more immediate charm, because there is more power running through it, but this is just elegance and finesse personified. Red cherry, raspberry, blueberry, blackberry, slate, saffron, oyster shell, they have teased out layers of complexity that were not easy to find in the vintage, and there is length also, with pummice stone salinity scraping across the palate. It's subtle, and it's not at the heights of a 2019 Canon, but this will not be out of place in a vertical of the estate. Tasted twice. 50% new oak, 40hl/h yield, harvest September 16 to October 8. The 2021 Canon was picked September 16 to October 6 and matured in 50% new oak for a planned 16–18 months. Around 70% of the vineyard produced the normal yield, which underwent a 50% deselection, yet it still yielded 40hL/ha because the vines did not suffer stress. After mildew, any bunches that showed damage on the stems were removed. Nicolas Audebert told me that there was no concentration or saignée, just a little chaptalization (around 0.5–1.0%, depending on the tank). This has quite a concentrated bouquet of opulent dark cherries, blueberry, violet and just a hint of camphor. The palate is medium-bodied and pliant, with gentle grip, saturated tannins and a judicious touch of spice toward the compact finish. While recent top-flight vintages may well eclipse this Canon, it still stands as a fine addition to the recent roster.

Dramatic, rich and imposing, the 2021 Canon is shaping up to be one of the wines of the vintage. Sculpted red purplish fruit, rose petal, lavender, sage and crushed rocks all race out of the glass. A heady, vertical wine, Canon is endowed with tremendous concentration and class. The aromatics alone are beguiling, but it is the wine's balance that impresses most. Tasted three times. This is such an elegant and regal wine.

Leuchtendes Rubin. Die Nase ist super komplex, tief, leicht rauchig, florale Noten, Veilchen, kalkige Mineralik, ein faszinierender, betörender Duft. Der Auftakt ist weich, rund und zeigt Cremigkeit, wird dann straffer, baut im mittleren Gaumen Druck auf, die Tannine sind von höchster Güte, der Wein hat ungemein Rasse, eine top Struktur und einen langen, fruchtig-frischen Abgang mit floralen Rückaromen. Finesse und Eleganz vereint, ein grandioser, aus dem Stein gemeisselter Saint-Emilion. 2028-2055 (Verkostet im April 2022. Château Canon/Dourthe)

Assemblages réalisés. Très beau nez à la fois fruits noirs "al dente" et fleurs délicates. Quelle élégance et quelle éclat, malgré une touche terrienne ! En bouche, la précision calcaire est magnifique avec des notes de réglisse, de graphite et de fruits frais. Texture ciselée et très calcaire pour des tanins frais, délicats et somptueux. Un grand Canon qui possède une finale de grande classe grâce à de beaux amers. Voici le vrai style de Canon avec cette tension calcaire magnifique. Bravo ! 95-97+

A brilliant wine in the making, the 2021 Canon offers up aromas of cherries, wild berries, licorice, sweet soil tones, raw cocoa, Indian spices and rose petals. Medium to full-bodied, layered and multidimensional, it's immensely refined and seamless, with a lively spine of acidity, ripe tannins and a long, penetrating, intensely saline finish. This beautifully balanced Canon is one of the classiest, most complete wines of the Right Bank in this vintage. Tasted four times.

Dark chocolate, perfume, violets, wild flowers and bramble berries on the nose, so much going on aromatically. Lovely succulence straight away, the bright acidity giving a mouthwatering effect and really delivering in terms of vibrant and lively fruit forwardness but with these lovely edges of graphite, slate, bitter chocolate, cream and salinity. So elegant and so refined as well as super stylish. I also love the cooling menthol Cabernet aspects you get all the way through and on the long finish. This has real class, but also an effortless quality to it that is so remarkable. One of the most memorable wines of the vintage! 3.37pH. Both Canon, Rauzan-Segla and Berliquet are excellent achievements this year.
