Muscular and very thick. Really a bit over the top. More dense and liqueur-like than any of the Californians. Sweet, furry and tannic. When do you drink this, I wonder. With cheese at the end of a meal? There’s a certain sourness on the finish too. Drink 2021-2030.

 The 2015 Arômes de Pavie, which is matured in 50% new oak, has a rich and quite heady bouquet for a deuxième vin, black cherries, crème de cassis and violet emerging from the glass although I would have liked more delineation. The palate is medium-bodied with firm tannin, well-judged acidity, a little dryness toward the finish with coconut and mocha on the aftertaste. I would just dial down the oak and pick a bit earlier. Anticipated maturity: 2019 - 2026.

The 2015 Arômes de Pavie, the second wine of Pavie, emerges principally from two hectares on the plateau that were previously used for the Grand Vin. Black cherry, chocolate, new leather and plum flesh out to give this sumptuous, racy Saint-Émilion its inviting personality. Racy and alluring, the Arômes is a gorgeous wine that may very well hold some surprises down the road. Tasted two times.

This vintage of the second wine of Château Pavie is a blend of 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon and was matured 50% in new and 50% in one-year-old French oak barrels. Deep garnet-purple colored, the 2015 Arômes de Pavie reveals a beguiling nose of smoked meats, fragrant earth and sautéed herbs over a core of warm red and black plums, cherry compote and blackberry pie plus a waft of dried lavender. Medium to full-bodied, the palate reveals very fine and ripe yet wonderfully firm tannins plus a seamless backbone of freshness supporting the generous fruit, finishing long with wonderful restraint and elegance.

Dark in profile, with plum, fig and blackberry fruit flavors carried by a very creamy, polished structure, picking up light ganache and licorice accents along the way. Lovely in feel, and approachable already. Drink now through 2025. 2,500 cases made.  –JM

The dried-fruit and wet-earth character are eye-catching with some cedar and sandalwood. Full body, tight tannins and super polish and finesse. Velvety. A great second wine of Château Pavie. Try in 2022.

This is tight and fully knitted together at this point. It is going to need a good six to eight years to relax, making it one of the less approachable second wines in this vintage for those looking for early drinking, but it does establish itself as a strong personality with a clear Pavie signature.

The 2015 Arômes de Pavie, the second wine of Pavie, is fleshy, open-knit and seductive, but it also has plenty of tannic clout to back things up. Large, ample and quite deep, the Arômes shows plenty of vintage 2015 personality. Sweet tobacco, leather, licorice and herbs add the closing shades of nuance. The 2015 has maintained good freshness and energy to balance the richness of the year. The blend is 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon.

The 2015 Les Aromes de Pavie is a blend of 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon cropped at 36 hectoliters per hectare. It has the freshest bouquet of the second wines from the Perse stable with brightness and lucidity. The palate is medium-bodied with tarry red and black fruit, a touch of charcoal just at the back of the mouth, leading to a broody finish that again, just needs to brighten up and develop more tension and vivacity.
