The Table of the Wolf - Domaine Cailhol Gautran - Minervois 2014
Domaine Cailhol Gautran is located on the first foothills of the Massif Central. The hamlet of Cailhol is in a valley, dug by a river: La Cessière. Like its big sister La Cesse, this river cuts off the Causse du Haut Minervois. The vineyards are located around the estate, within a radius of 3 kilometers. Most of the vines are on the Cazelles plateau. The vineyard now counts 55 hectares of vines in production. These vines are planted on a limestone plateau facing south at 200 meters above sea level. Wine vinified in a 100% natural way, without addition of yeast, sulphites or oenological product. The grapes were destemmed before being sprinkled. Daily replanting during maceration. The spontaneous fermentation, slow, lasted 3 weeks. Tangential filtration prior to bottling ensures wine stability.
