Our job is made of exciting moments oscillating from the greatest stress to the greatest joy. But, we could still increase the dose by making white wine on a land of red. This land is so red that no Médoc appellation recognizes white wine. The white wine produced on the peninsula is of Bordeaux Blanc protected designation of origin. There are barely a dozen white wines in Médoc. In the 90s, two hectares were planted with 65% Sémillon and 35% Sauvignon Blanc. We did not have White culture, so we fumbled about the volume of wood, the farming ways, the obvious issues of maturity etc. At first, the only consumers of this wine were the family members, the friends, the employees of the castle. We did not want to sign this wine publicly yet. Little by little, we refined our methods and our palate. We calibrated it for white grape varieties and their blend. In 1995, first commercialization with a good success of esteem, as one says of the films of author filling a room during a week. Then our work, the signature Chasse-Spleen, persuaded, little by little, a growing number of aficionados. Today, we are arming our techniques, our tasting skills along the process of the wine plant and Blanc de Chasse-Spleen is tutoie more and more the best Bordeaux white wines.
