Flavors of Pavia - Château Pavie - Saint-Emilion Grand Cru 2014

GEOLOGICAL CHARACTERISTICS The Château Pavie is characterized by a great diversity of terroirs; It is interesting to situate the vineyard: - Terroir corresponding to the limestone "plateau" of Saint Emilion, located about 85 meters from the level of the Dordogne composed of clayey-limestone soil above limestone to asteria. - Terroir corresponding to the so-called "middle of the coast" located about 55 meters from the level of the Dordogne composed of a clay-limestone soil with fine texture. VITICULTURE Size with 6 buds for old vines and 2 for young vines, harvesting in green, thinning out, hand harvesting with sorting. VINIFICATION It is adapted to the strict potential of the harvest. 21 thermoregulated wooden vats welcome the grape harvest for a vat of 3 weeks. Malolactic fermentation in barrels. Aging in barrels of a wine of 18 to 24 months. LIVING 100% barrels of a wine.

A dense, powerful wine, the 2014 Les Aromes de Pavie offers considerable richness for a second wine. A burst of smoke, new leather, black cherries and iron hit the palate. Exuberant and racy to the core, the 2014 Aromes gives more than a glimpse into the unique personality of this great St.-Emilion estate. The blend is 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon.

The Arômes de Pavie 2014 is a blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon, cropped at 36 hectoliters per hectare with a pH of 3.85. Matured in one-year-old oak, it has a ripe blackcurrant and cigar-box nose that feels a little austere. The palate is medium-bodied with dry tannin on the entry, moderate acidity, but a slightly smudged finish. I worry about the finish here that needs a little more fruit to come through and balance the wood tannins.

A wine with good concentration and lifted aromatics of violets, cedar and sweet ripe red currant. This second wine of Chateau Pavie is well-made, with nice texture, good concentration and finish. A very attractive wine in this vintage.

36 hl/ha. 79% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon. 
Very deep crimson. Meaty, savoury nose and hugely intense fruit. Very sweet indeed. Taken to an extreme and admirable for those who seek sweetness. But the style does seem rather old fashioned now. Cheval Blanc at the other end of the scale. VCC has been there for some decades. Ovomaltine. Drying finish.
